Al Forno Ferruzza sits on the southern edge of downtown in the middle of a construction zone. Parking nearby is a masochistic endeavor. Still, you must try it. Dispensing made-to-order pizza, ethereally light calzones (really!) and some of the best soft-crust (i.e., won't rake the roof of your mouth) bread I've had in Portland, this newcomer to the exploding food-cart scene is one to watch (and worship).
Stephen Ferruzza, 24, who learned about pizza and Italian cookery from his Sicilian father and aunts, brings unbridled exuberance to his operation. Undeterred by a lack of electricity, Ferruzza fuels a pair of 800-degree ovens with propane, boiling water in the oven to proof dough for the 10-odd loaves (garlic-rosemary, parmesan-peppercorn, sesame and pesto) he produces on weekdays. Gourmet Solutions Ltd is a culinary school aimed at teaching a broad range of non-degree programs of professional culinary techniques in a fun and casual environment. Class structure will include lectures, hands-on and tasting opportunities.
